Peanut & Ginger Zoodles with Thai Styled Mango & Carrot Slaw

Some meatless Monday inspiration. A very fresh salad packed with a lot of crunch since I kept the zoodles raw. If you don’t like them raw, you can always sauteed them in a pan and make this into a lukewarm salad. The Thai styled mango and carrot slaw balances out the richness of the peanut & ginger sauce. I love peanut butter, but it was only since I moved to the Netherlands that it became part of my diet. I love to add some to my porridge during winter.

Calve peanut butter became a staple in my pantry. It’s the brand my husband grew up eating, so it made sense for him to introduce it to me. Ever since, I haven’t looked back. So I’m very happy to have partnered with them to create this recipe, using their original peanut butter. If you love peanut butter, stay tuned because I have a snack recipe coming soon. Pieter and I were in London for the weekend, so more pictures and hotspots are coming to the blog soon too.

This recipe serves 2-3 people.

Ingredients:

For the zoodles:

4 zucchini

For the mango & carrot slaw:

3 carrots, shredded (I used rainbow carrots)

1 mango, julienned

5 tablespoons of chopped coriander

For the Thai styled dressing:

1 tablespoon of minced ginger

Juice of 1 lime

4 tablespoons of olive oil

4 tablespoons of white vinegar

1 teaspoon of fish sauce

1 tablespoon of soy sauce

1 tablespoon of honey

1 teaspoon of brown sugar

1 small bird’s eye chili, finely chopped

Pinch of garlic powder

Pinch of salt

1 teaspoon of sesame oil

For the peanut & ginger sauce:

2 tablespoons of minced ginger

130grs of Calve smooth peanut butter (1/2 a cup)

2 tablespoons of ginger syrup (or honey)

4 tablespoons of sesame oil

2 tablespoons of soy sauce

2 tablespoons of water

2 tablespoons of white vinegar

Pinch of salt

1 teaspoon of chili bean sauce

Pinch of garlic powder

To make the zoodles, I used a mandoline with the julienne attachment. I stopped when I got to the core. You can also make them with a spiralizer or a potato peeler. If you use a potato peeler, just slice it into ribbons and then using a knife, cut it into julienne. You can also buy the zoodles at the supermarket if you don’t feel like making them. Set them aside.

To make the Thai styled dressing, just place all of the ingredients in a jar with a lid. Close it and shake it until it emulsifies. Set it aside.

For the peanut and ginger sauce, place all of the ingredients in the blender and blend until smooth.

Right before serving mix the carrots, mango and coriander for the slaw with the dressing (remember to give it a good shake before adding it to the slaw).

Divide the zoodles between 2 or 3 bowls. Add the peanut & ginger sauce. Finish it by adding the slaw. Eat right away. Enjoy!

I like the zoodles raw since this is a cold salad. But if you don’t, you can always sautéed them in a pan for about 1 minute with a little bit of olive oil.

Jerusalem Artichoke Tacos with Rainbow Carrot & Beet Salad and Chive Sour Cream

Another super easy taco recipe and a great way to eat more veggies. And dinner can be ready in about 30 minutes. A layer of iceberg lettuce, topped with a crunchy salad of rainbow carrots and beet. Then some pan-roasted Jerusalem artichoke and finally some chive sour cream. I’ve been so busy lately with different projects that I haven’t had much time to make new recipes but I’m trying to catch up on my cooking this week. I can’t believe it is almost the end of the year!

This recipe makes 12 small tacos.

Ingredients:

For the salad:

5 medium rainbow carrots, shredded

1 beet, shredded

For the dressing:

¾ teaspoon of mustard

1/3 cup of white vinegar

1/3 cup of olive oil

1 ½ teaspoon of honey

Salt to taste

For the chive sour cream:

250gr of sour cream

1/3 cup of chopped chives

Juice of 1 lime

Celery salt to taste

Cayenne to taste

For the Jerusalem artichokes:

600grs of Jerusalem artichokes, peeled and finely diced

3 tablespoons of olive oil

1 tablespoon of sumac

Salt

Pepper

Extras:

100grs of chopped iceberg lettuce

12 small tortillas

 

To make the dressing, just place all of the ingredients in a jar with a lid. Close the lid and shake it until it emulsifies. Set it aside.

Shred the carrots and beet but only add the dressing before serving so they keep their crunch.

To make the chive sour cream, just mix the chives with the sour cream, lime juice, celery salt and cayenne. Cover it and keep it in the fridge till serving time.

Pour the olive oil for the Jerusalem artichokes in a large pan over medium heat. Once the oil is hot, add the diced Jerusalem artichokes, sumac, salt and pepper. Cook for about 8 minutes, stirring from time to time, until they become golden.

Warm up the tortillas. Add the dressing to the carrot and beet salad, and mix well.

Stuff each tortilla with some lettuce, salad, Jerusalem artichokes and the chive sour cream. Enjoy!

Golden Beet & Yellow Carrot Soup with Feta & Pistachios

As far as the weather forecast goes, it seems like temperatures are finally going to rise. And I couldn’t be happier. I’m so tired of feeling cold every time I go outside. So I am very much looking forward to warmer weather and picnics in the park. But till then, a creamy golden soup for this meatless Monday.

This recipe serves 3.

Ingredients:

For the soup:

800grs of golden beet, peeled and chopped into chunks

700grs of yellow carrots, peeled and chopped into chunks

2 cloves of garlic, minced

2 tablespoons of olive oil

1 leek, finely chopped (white part only)

2 medium shallots, chopped

1 1/2 litters of vegetable stock

100ml of cream

Salt to taste

Toppings:

150grs, crumbled feta or goat cheese

40gr of chopped pistachios, pan roasted

Garden cress

 

Place the olive oil, leek and shallots in a large saucepan over medium low heat. Cook for 5 minutes while stirring from time to time. Don’t let it get brown.

Then add the carrots, beets and garlic. Stir for 1 minute and then add the vegetable stock.

Let it cook for 25 minutes until the beets and carrots are cooked through.

Then blend it until smooth. Add the cream and salt to taste.

Divide the soup into 3 bowls and top with some crumbled feta (or goat cheese), pistachios and garden cress. I also added some nasturtium leaves as decoration.

Vegetarian Banh Mi-Style Nachos

I’ve been craving nachos lately so I made these banh mi-style. I made quickly pickled carrots, but you can also add daikon if you want. Instead of tortilla chips, I used spring roll wrappers which I cut into squares and then deep fried. And for the sauce, I made a Greek yogurt and Sriracha sauce with lime juice.  These “nachos” are slightly sweet, sour, spicy and very crunchy. A very addictive snack!

This recipe serves 2.

Ingredients:

125gr of square frozen spring rolls wrappers for frying (I got the small ones of about 10x10cm), thawed

1 litter of vegetable oil

1 red chili, thinly sliced

A handful of coriander leaves

For the quickly pickled carrots:

1 cup of shredded carrots (you can also make it with half carrots and half daikon)

½ cup of vinegar

¼ cup of sugar

1 teaspoon of salt

For the Greek yogurt – Sriracha sauce:

1/3 cup of Sriracha

1/3 cup of Greek yogurt

Juice of ½ lime

1 teaspoon of white vinegar

Salt to taste

 

The night before, place the frozen spring roll wrappers in the fridge to thaw.

In a medium bowl, mix the vinegar, sugar and salt to pickle the carrots. Add the carrots and mix well. Keep it in the fridge until ready to serve (Let it pickle for at least 15 minutes).

I find that just one sheet of the spring rolls is too thin, you can do it like this but I prefer to leave 2 sheets sticking together because they hold the toppings better. I used kitchen scissors to cut each double sheet into 4 squares. Repeat until you are done with all of the wrappers.

Pour the oil into a medium saucepan over medium heat. Once the oil is hot, start frying the wrappers in small batches. Fry them until they are golden. Then place them in a large plate lined with paper towels. Repeat until all of them are fried.

To make the Greek yogurt-Sriracha sauce, just mix all of the ingredients in a bowl. Add salt to taste. Pour it into a zip lock bag.

Drain the pickled carrots.

To serve, place the fried wrappers on a large plate. Spread the pickled carrots all over. Then slice off the tip of the zip lock bag with the sauce, and drizzle it over the nachos. Finish it by adding fresh coriander leaves and finely sliced chili. Enjoy!

Beet Couscous with Balsamic Glazed Carrots & Carrot Top Dressing

I didn’t like carrots as a kid and now I love them, especially when they are roasted. These are sweet and still crunchy, and to not waste the carrot tops, I made a dressing with it. A very simple and easy vegetarian dish but still packed with flavor.

This recipe serves 2.

Ingredients:

For the carrots:

7 medium carrots, peeled and sliced into about 6cm long sticks

3 tablespoons of melted butter

¼ cup of balsamic vinegar

¼ cup of sugar

½ teaspoon of salt

For the couscous:

1 cup of couscous

1 cup of vegetable stock

1 tablespoon of butter

1 medium roasted beet

For the carrot top dressing:

½ cup of chopped carrot top

2 tablespoons of chopped basil

1/3 cup of olive oil

20gr of grated Parmesan

2 tablespoons of white vinegar

1 tablespoon of honey

Juice of ½ a lime

Salt

Pepper

Extras:

¼ cup of toasted slivered almonds

 

Preheat the oven to 180C/350F and line a baking sheet with parchment paper.

Mix the melted butter, balsamic vinegar, sugar and salt in a medium bowl. Then add the carrots and toss to coat them. Spread them on a single layer in the prepared baking sheet. Pour the remaining glaze over the carrots.

Roast the carrots for 45 minutes, stirring half way through.

While the carrots are roasting, start making the dressing. Just blend all of the ingredients together until smooth. Taste for salt and pepper. Set it aside.

Once the carrots are done, start to make the couscous. Blend the vegetable stock with the roasted beet. Then pour it into a medium saucepan and add the butter over medium heat. Once the butter has melted, turn off the heat and add the couscous. Mix it well and cover it with a lid. Let it be for 5 minutes and then fluff it using a fork.

Serve the couscous with the glazed carrots, the carrot top dressing and slivered almonds.

Salmon Burgers Glazed with Carrot Miso Butter

I am so done with winter now. I’m looking forward to warmer days and to see more colors/produce at the markets. And burgers remind me of summer, so I made this salmon burger in anticipation of the months to come. I cooked the patties in a reduction of carrot juice, miso, butter and ginger syrup. I find it such a great combination. The sugars in the carrot juice and ginger syrup make the salmon caramelize nicely in the pan.

This recipe is for 5 small patties but you can easily double the recipe.

Ingredients:

For the patties:

300gr of salmon, skinless and boneless

1 egg yolk

1 spring onion, finely chopped

1 teaspoon of sesame oil

Salt

Pepper

¼ cup of panko

2 tablespoons of cornmeal

For the carrot miso butter:

1 cup of carrot juice

1 tablespoon of red miso

1 tablespoon of butter

1 tablespoon of sesame oil

1 tablespoon of ginger syrup

For the wasabi mayonnaise:

5 tablespoons of mayonnaise

1 teaspoon of wasabi paste, or more to taste

Extras:

5 buns, my store was out of round ones so I used mini pistolets

Wasabi arugula

 

 

To make the wasabi mayo, just whisk the wasabi paste with the mayonnaise. Keep it covered in the fridge until ready to use.

Mince the salmon with a knife, about the size of finely chopped onions.  Mix it with the egg yolk, spring onion, sesame oil, panko, cornmeal, salt and pepper. Mix well. Grab about 1/3 of a cup of the salmon and shape it into one patty. Repeat for the remaining salmon. Cover them with plastic wrap and keep them in the fridge until ready to use.

To make the carrot miso butter; place the carrot juice, miso, butter, sesame oil and singer syrup in a large non-stick pan over medium heat. Let it reduce for 10 minutes while stirring, until it becomes a thick sauce.

Take the salmon patties out of the fridge and carefully place them on the pan with the carrot miso butter. Brush the top of the patties with some of the sauce, and let them cook for about 2 minutes per side until it caramelizes. I made the patties small so it didn’t take very long for them to cook.

Besides the wasabi mayo, I like to serve them with some wasabi arugula dressed in olive oil, vinegar, salt and pepper.

Carrot Cake with Cream Cheese Elderflower Frosting & Sugared Cranberries

This carrot cake is always a winner when I have friends over or when I take it to house parties. It’s moist and so easy to make. This time I added some elderflower cordial to the frosting to add a floral tone. I love elderflower cordial and we always have a bottle in the house, even though we mostly use it for gin & tonics. If you like elderflower, you may also like this Strawberry Elderflower Lattice Pie.

This recipe is for a small 19cm round cake mold. But you can easily double the recipe to make a larger cake.

Ingredients:

For the sugared cranberries:

2 cups of sugar

2 cups water

2 cups of fresh cranberries, washed and picked through

¾ cups of sugar

For the carrot cake:

1 cup of all-purpose flour

1 cup of sugar

1/2 cup of vegetable oil

2 eggs

1 1/2 cups of shredded carrot

3/4 cup of pecans or walnuts, chopped

Zest of 1 mandarin

1 teaspoon of baking powder

1/2 teaspoon of salt

For the cream cheese and elderflower frosting:

¼ cup plus 1 tablespoon of cream cheese at room temperature

3 tablespoons of butter, softened

3 tablespoons of elderflower cordial

2 cups of icing sugar

Extra:

Fresh mint leaves for decoration (optional)

 

 

Start by making the sugared cranberries the night before. Place 2 cups of water plus 2 cups of sugar in a medium saucepan and let it simmer over medium heat until the sugar dissolves. Stir from time to time. Once the simple syrup is done, transfer it to a bowl and let it cool for 20 minutes. You want to let it cool before you add the cranberries otherwise they may pop.

Once the syrup has cooled down, add the cranberries and stir to coat them. Cover the bowl with plastic wrap and let it sit in the fridge overnight.

The next morning, drain the cranberries. You can save the simple syrup for another recipe or for a cocktail. Place the ¾ cup of sugar on a shallow plate and start rolling the cranberries in it until they are evenly coated. Then place them on a baking sheet and let them dry for at least 1 hour.

To make the carrot cake, preheat the oven to 180C/350F. Line the bottom of a 19cm round cake mold with parchment paper. Grease and flour the edges of the mold.

Beat the sugar with the eggs. Then add the vegetable oil, shredded carrot, the flour, the baking powder and the salt. Finally add the mandarin zest and the nuts. Pour the batter into the prepared cake mold.

Bake for about 45 minutes or until a toothpick comes out clean from the center of the cake. Allow the cake to cool down completely before you start making the frosting.

To make the frosting, whisk the softened butter with the cream cheese until well combined. Then add the elderflower cordial and whisk. Then gradually add the icing sugar. Whisk until you have a smooth frosting.

Carefully remove the cake from the mold and plate it. Then frost it with the help of a spatula. I only added it to the top and swirled it around a bit with a spoon. Place some of the sugared cranberries in the middle of the cake. If you want you can add a few mint leaves for extra color. Keep the cake in the fridge. Enjoy!

Butternut Squash, Carrot and Sweet Potato Soup with Sumac & Za’atar Roasted Cashew Crumbs and Shaved Asparagus (Vegan)

A very easy and comforting soup with added crunch from the raw asparagus and cashew crumbs. Perfect for this cold weather.

This recipe serves 3.

Ingredients:

For the soup:

1 medium butternut squash, just chopped into pieces

4 medium carrots, peeled and chopped into pieces

2 medium sweet potatoes

2 tablespoons of olive oil

1 white onion, chopped

2 cloves of garlic, minced

1 litter of vegetable stock

½ teaspoon of celery salt

Pinch of paprika powder

Salt to taste

For the cashew crumbs:

1 cup of salted cashews, finely chopped into crumbs

2 tablespoons of olive oil

Pinch of paprika powder

1 tablespoon of sumac

1 teaspoon of Za’atar

Pinch of salt (optional)

For the asparagus:

8 asparagus

Salt

Pepper

 

Chop the butternut squash (leave the skin and seeds on, they will come off easier after being roasted) and carrot into chunks. Place the butternut squash, carrots and whole sweet potatoes in an oven tray lined with parchment paper. Drizzle some olive oil over the squash and carrot. Sprinkle with some salt and then roast them in the oven at 180C/350F until tender. This will take about ½ hour for the squash and carrots, and 1 hour for the sweet potato. So just check from time to time.

Once the vegetables are roasted, scoop out the seeds from the butternut squash and discard them. Then scoop out the flesh and set it aside. Peel the sweet potato.

In a medium saucepan, add the olive oil over medium heat. Then add the onions and cook until translucent. Add the garlic and cook for 1 minute. Then add the butternut squah, carrots and sweet potatoes. Add the stock, celery salt and paprika powder. Let it simmer for 5 minutes and then blend it until smooth using an immersion blender. Taste it, and then add salt to taste.

To make the cashew crumbs, mix the chopped cashews with the spices and olive oil. Roast them for 15 minutes at 180C/350F. Stir the crumbs half way through.  Set it aside to cool.

When you are ready to serve, reheat the soup and start preparing the asparagus. Grab a potato peeler and start to shave the asparagus. Don’t worry if some break. Then season them with salt and pepper.

Serve the soup with the seasoned shaved asparagus and some of the cashew crumbs. Enjoy!

Purple Carrot & Golden Beet Tart with Tahini & Sumac

I made this tart today for dinner and it hardly lasted till dinner. Since I cook everything early to be able to photograph it during daylight, it was hard to stop eating it. I love the sweetness of the carrots and beets combined with the citrusy sumac and creamy tahini. It’s a very easy tart to make for this holiday season.

This recipe is enough for a 40x24cm tart.

Ingredients:

1 sheet of puff pastry (40x24cms)

4 medium purple carrots, thinly sliced lengthwise with a mandolin

1 very large golden beet, thinly sliced with a mandoline

Olive oil

Salt

Pepper

For the tahini-sumac sauce:

¼ cup of tahini

1 tablespoon of sumac

Juice of ½ a lemon

2 tablespoons of olive oil

1 tablespoon of honey

2 tablespoons of balsamic vinegar

Pinch of garlic powder

Pinch of onion powder

Chili flakes to taste

Pinch of salt

Pinch of pepper

For the toppings:

80grs of feta, crumbled

¼ cup of chopped chives, dressed in a bit of olive oil, white vinegar, salt and pepper

¼ cup of toasted pine nuts

2 tablespoons of pomegranate seeds

Extra:

Egg wash

 

Preheat your oven to 180C/350F.

Cook the thinly sliced carrots and beets in a large pan with some olive oil, salt and pepper. I cooked them separately for about 5 minutes until tender but still firm, stirring often.

To make the tahini-sumac sauce, just mix all of the ingredients in a bowl.

Place the puff pastry on an oven sheet lined with parchment paper. Fold the edges, making a 1cm border and pinch to seal them. Using a fork, pinch the dough all over, except for the borders.

Spread the tahini-sumac sauce evenly over the pastry. Arrange the cooked carrot and beet slices all over the pastry. Make sure to spread them evenly, so there is a good ratio of carrot/beet on each slice later on.

Brush the edges of the puff pastry with the egg wash. Bake it for 35 minutes, till golden.

To serve, spread the crumble feta all over. Do the same for the toasted pine nuts, pomegranate and the dressed chives. Enjoy!

Popcorn with Pecans and Oven-Baked Rainbow Beet & Carrot Chips

Yesterday I was craving a salty snack so I made this combination of popcorn, pecans and oven-baked veggie chips. I used rainbow carrots and beets to add some color.

Ingredients:

For the popcorn:

1/3 cup of popcorn kernels

1 ½ vegetable oil, or coconut oil

Salt

For the beet and carrot chips:

1 medium purple carrot

1 medium yellow carrot

2 medium candy cane beets

2 tablespoons of olive oil

2 tablespoons of apple cider vinegar

Salt

Extras:

1 cup of pecans

 

Preheat the oven to 190C/375F. Line a baking tray with parchment paper.

In a large pan with a lid, add the vegetable oil or coconut oil over medium heat. Once the oil is hot, add the popcorn kernels. Cover with the lid, and keep shaking the pan until all the kernels have popped. Transfer the popcorn to a large bowl, add salt and set aside.

Peel the carrots and beets. Using a mandoline, thinly slice them. Place the slices in a bowl. Add the olive oil and apple cider vinegar. Using your hands, rub the slices with the oil and vinegar so they are all well coated.

Place the slices on a single layer in the prepared baking tray and sprinkle them with some salt. Bake for 15 minutes and then flip each slice. Finally bake for an extra 5-10 minutes. This is where you need to check, so they don’t burn. They might need a little less time depending on your oven and the thickness of the slices.  Then transfer them to a cooling rack. Once the chips have cooled down, mix them with the popcorn and pecans. Serve right away and enjoy!
