Turmeric, Ginger & Lemon Loaf

This sweat bread is so delicious. The ginger, lemon and cinnamon filling becomes sticky, creating a wonderful crust on top. And these flavors go so well with the turmeric bread. Filled with warm flavors, this is perfect for the cold months that are ahead of us. Plus just look at the amazing color that the turmeric gives! Pieter and I already finished half of it for lunch. This loaf also works very well as French toast.

This recipe is for one large loaf (25cm loaf pan).

Ingredients:

For the dough:

3/4 cup of warm water

7grs of dry yeast

4 cups of all-purpose flour

2 eggs

4 tablespoons of melted butter

½ teaspoon of salt

½ cup of granulated sugar

1 teaspoon of ginger powder

½ teaspoon of cinnamon powder

2 tablespoons of turmeric powder

For the filling:

Zest of 2 lemons

1 tablespoon of cinnamon powder

2 tablespoons of very finely chopped ginger

1 1/4 cup of sugar

Juice of 1 lemon

 

Place the yeast and the warm water in the bowl of the stand mixer. Let it stand for 5 minutes.

After the 5 minutes are up, add the remaining ingredients for the dough. Knead on low speed for 5 minutes, using the dough hook attachment. If you knead it by hand, do it for about 10 minutes.

Then remove the dough from the bowl. Clean the bowl and grease it with a bit of vegetable oil. Form the dough into a ball and place it back into the greased bowl. Cover with plastic film and let it rise for 1 hour in a warm place.

While the dough is rising, make the filling. Mix the lemon zest, lemon juice, sugar, cinnamon and the chopped ginger in a small bowl. Set it aside until ready to use.

Once the dough has risen, divide it into 2 equal pieces. Roll out one piece into a rectangle of about 34x26cm. Spread half of the filling all over the dough. Then roll it like a tight crepe. Repeat for the remaining piece of dough. If you prefer to have visuals on how to form the dough, check this older post of mine.

Once you have two filled logs, grab one and make a clean slice over the middle. But leave the top part attached. Then twist it trying to keep the open side up. Do the same thing with the other log. Then twist the two logs together. Slice off the uneven edges. Then pinch the edges to seal them and tuck them underneath.

Place the babka in a loaf pan lined with parchment paper. Do it carefully, so that you don’t stretch the dough too much and that the filling doesn’t spill out. 

 

Cut off a piece of plastic wrap (large enough that so that it covers the loaf pan). Brush one side with a bit of vegetable oil. Cover the top of the loaf with the plastic wrap, greased side down.

Let it rise for 1 hour in a warm place.

About 15 minutes before the second rise is up, preheat your oven to 180C/350F.

Once the loaf is done rising, bake it for 35 minutes.

Carefully remove the loaf from the pan. Enjoy!

If you have some left over the next day, you can make it into French toast.

Orange & Pink Peppercorn Rolls with Orange Glaze and Pomegranate Seeds

Holiday season is around the corner and with that comes family and friend gatherings. These rolls are great for dessert or brunch, and are perfect for sharing. I mixed the pink peppercorns, sugar and orange zest in the food processor. This allows the natural oils in the orange zest to come out and the whole pink peppercorns to be crushed. This recipe is very aromatic and the pink peppercorns add a very subtle heat and peppery taste. The tartness of the pomegranate seeds are there to balance the sweetness in the glaze, as well as to add a more festive feel to it. We just had a couple of these and will probably finish the rest during movie night later today.

This recipe makes about 11 small rolls.

Ingredients:

For the dough:

7 grs of dry yeast

1 cup of warm milk

3 ½ cups of all-purpose flour, plus more for rolling

2 teaspoons of vanilla essence

Pinch of salt

4 tablespoons of butter, melted and cooled

1/3 cup of sugar

1 egg

For the filling:

1 cup of sugar

Zest of 3 oranges

1 tablespoon of pink peppercorns

1 teaspoon of cinnamon powder

3 tablespoons of melted butter

For the egg wash:

1 egg

1 tablespoon of water

For the glaze:

2 cups of icing sugar

Fresh orange juice (about 1 orange), without pulp

Extra:

½ cup of pomegranate seeds

 

Place the warm milk and yeast in the bowl of the stand mixer and let it sit for 5 minutes. After the 5 minutes have passed, add the remaining ingredients for the dough to the bowl with the yeast.

Knead on low speed for 5 minutes, using the dough hook attachment. You can also knead it by hand.

Then remove the dough from the bowl. Clean the bowl and then grease it with a bit of vegetable oil.  Form the dough into a ball and place it back into the greased bowl. Cover with plastic film and let it rise for 1 hour in a warm place.

Once the hour has passed, lightly butter the oven dish in which you are going to bake the rolls. To make filling, place the sugar, orange zest, pink peppercorns and cinnamon in the food processor. Pulse for a couple of minutes until the peppercorns are crushed. Transfer the sugar to a small bowl. Have the butter already melted and ready with a brush.

Place the dough on a lightly floured surface and roll it into a large rectangle. Then brush the top of the dough with the melted butter. Sprinkle the sugar mixture evenly on top. Roll it tight lengthwise. Cut the uneven edges and discard of them. Now that you have an even rolled dough, cut it into about 11 even pieces. Place the pieces on the prepared oven dish, leaving some space in between. Brush a large piece of plastic wrap with vegetable oil. Cover the rolls with the greased side down. Let them rise for 1 hour in a warm place.

About 10 or 15 minutes before the timer is up for the second rise, preheat your oven to 180C/350F.

Once the hour is up, remove the plastic wrap from the oven dish, brush the rolls with the egg wash and bake them for about 23-25 minutes until golden.

Once the rolls are baked, start making the glaze. Place the icing sugar in a small bowl. Slowly pour in the orange juice while whisking until the glaze becomes pourable. Once the glaze is of your desired consistency, just pour it on top of the rolls. Add some pomegranate seeds. They are best when served right away while they are still warm. Enjoy!

Maple & Pumpkin Soft Pretzel Wreath

Soft pretzels, fall edition. These bread wreaths are flavored with pumpkin puree, maple syrup and spices. All with the soft pretzel crust. They are best when they are hot, right out of the oven. You can make them any shape you wish, I just went with wreaths this time. It’s easier if you make them small, since the dough is quite soft. If you make them too big, you risk the dough falling apart while transferring it to and from the water bath. So keep that in mind. This is not a very sweet pretzel, but you can always brush it with a bit of melted butter after it is baked and sprinkle a bit of cinnamon sugar on top.

This recipe makes 3 medium wreaths.

Ingredients:

For the dough:

1 cup of warm water

1 package of dry yeast (7gr)

2 tablespoons of butter, melted and cooled

3 1/2 cups of all-purpose flour

¾ cup of pumpkin puree

1 ½ tablespoons of maple syrup

Pinch of salt

1 teaspoon of cinnamon powder

½ teaspoon of ginger powder

½ teaspoon of nutmeg

For the water bath:

10 cups of boiling water

2/3 cup of baking soda

For the maple egg wash:

1 egg

2 tablespoons of maple syrup

Extras:

Vegetable oil

 

 

To make the pumpkin puree, just chop a small pumpkin into chunks (skin and all). Place it in a microwave-safe plate. Cover it with plastic film and microwave it for 10 minutes until the pumpkin is soft. Then remove the seeds and scoop out the pumpkin flesh. Place the pumpkin flesh in a bowl and mash it. Allow it to cool down.

Place the warm water and the yeast in the bowl of the stand mixer. Let it stand for 5 minutes. Then add the remaining ingredients for the dough. Knead the dough with a stand mixer fitted with a dough hook attachment. Do it on low speed for about 5 minutes, until it stops sticking to the edges and it forms a ball. You can also knead it by hand.

Remove the dough from the bowl. Clean the bowl and then grease it with some vegetable oil. Place the dough back in the greased bowl and cover with plastic film. Let it rise in a warm place for 1 hour, until it has doubled in size.

Preheat the oven to 230C/450F. Line a baking tray with parchment paper. Lightly grease the parchment with vegetable oil.

Start making the water bath. Mix the boiling water with the baking soda in a large pot.  Make sure it is not completely filled to the top because the baking soda bubbles a bit. Leave the heat on medium, while you work on the dough.

Place the dough in your working area sprinkled with a bit of flour. Divide the dough into 3 pieces.

Grab one piece and roll it into a rope of about 40 cm, then slice it into 2 lengthwise. Twist together the 2 halves and then pinch the ends together to seal them. Finally form a circle with it, tuck the ends underneath and give it a pinch to seal them. Repeat for the other 2 pieces of dough. It’s better not to make them too big. The circumference of each wreath shouldn’t be that much bigger than the circumference of your slotted spoon, otherwise it’s going to be hard to place it and remove it from the water bath. The dough is quite soft and you don’t want it to fall apart.

Place one wreath in the water bath for 30 seconds. Then carefully remove it from the water using a large slotted spoon an place it on the prepared baking tray (once you place it in the parchment paper, you can’t move the wreath anymore until it is baked, so keep that in mind). Repeat for the other wreaths.

Once they are all done, brush them with the maple egg wash.

Bake them for about 10 minutes until golden. Serve warm.

Strawberry Jam Rolls with Peanut Butter Glaze

Peanut butter and jam is such a childhood favorite and classic combination. I’ve partnered with Hero Fruit to create this sweet rolls recipe using their strawberry jam. For extra flavor, I used coconut milk but if you don’t like it, you can use plain milk instead. For the Dutch version of this recipe and many others, you can check out www.herojamstudio.nl.

This recipe makes 8 large rolls and serves 8 people.

Ingredients:

For the dough:

3 3/4 cups of self-rising flour, plus extra for your working area

7gr dry yeast

1 cup of coconut milk

1 teaspoon of salt

4 tablespoons of butter, melted and cooled

3/4 cup of sugar

1 egg

For the filling:

Half a jar of Hero Original strawberry jam

For the egg wash:

1 egg

1 tablespoon of water

For the peanut butter glaze:

1 cup of icing sugar, sifted

¼ cup plus 1 tablespoon of milk

1 teaspoon of vanilla essence

¼ cup of creamy peanut butter

Extra:

Vegetable oil, for greasing the bowl and oven dish

To make the dough, warm the coconut milk in the microwave for about 30 seconds. You want it to be lukewarm. Then place it in the bowl of the stand mixer and add the dry yeast. If the coconut milk is too warm, let it cool down a bit before you add the yeast. Let it sit for 5 minutes. In the meanwhile melt the butter in the microwave and allow it to cool down.

Once the 5 minutes for the yeast have passed, add the flour, salt, sugar, butter and the egg. Knead on low speed for 5 minutes, using the dough hook attachment. You can also knead it by hand (for about 10 minutes).

Then remove the dough from the bowl. Clean the bowl and then grease it with a bit of vegetable oil. Form the dough into a ball and place it back into the greased bowl. Cover with plastic film and let it rise for 1 hour in a warm place.

Lightly grease your oven dish with some vegetable oil.

Once the hour has passed, place the dough on your floured working area. Punch it down. Roll it into a rectangle (about 42x32cm). Spread about half of a jar of Hero strawberry jam all over the dough except for the edges. Now this is where it can get a bit messy. Carefully roll the dough lengthwise, be careful not to press too much otherwise the jam will come out from the sides. Then using a very sharp knife, cut off the uneven edges and discard them.

Slice the roll into 8 even pieces. Transfer them to your greased oven dish and be careful not to spill the jam.

Cut a large piece of plastic wrap and brush it with some vegetable oil. Use it to cover the rolls, greased side towards the rolls. This will prevent the plastic wrap from sticking to the rolls once they rise.

Let the rolls rise for 1 hour in a warm place.

About 10 minutes before the time for the rolls has passed, preheat your oven to 180C/350F.

To make the egg wash, beat one egg with 1 tablespoon of water.

Once the rolls have risen for 1 hour, remove the plastic wrap and brush the rolls with the egg wash.

Bake them for 20 minutes or till golden.

To make the peanut butter glaze, place the peanut butter in a bowl and microwave it for about 30 seconds so it is easier to whisk.

Whisk the warm peanut butter with the milk, vanilla extract and icing sugar. Whisk it for about 5 minutes until it is smooth.

Drizzle some of the peanut butter glaze over the warm rolls. Serve and enjoy!

My Festival Burger Part 2 (Cheeseburger with Sundried Tomato Pesto and Caramelized Onions on a Potato Hamburger Bun)

A few weeks ago, Hellmann’s asked me to create my own festival burger and I hosted a giveaway. I asked you guys to pitch your favorite festival burger on Instagram and I would make the winner’s idea into a recipe. The idea which won was a beef burger served on a potato bun with caramelized onions, lettuce, sundried tomatoes, cheddar and Hellmann’s.

I’m all for any kind of burger (veggie, fish, chicken) but sometimes I just crave a good old fashion beef burger, preferably with cheese. It’s been a long time since I had a potato bun and since I love making bread, I created this potato hamburger bun recipe. Instead of adding just sundried tomatoes, I made a pesto with them. The result is a finger lickin’ good burger. If you are curious about my first festival burger, you can check it out by clicking here.

This recipe makes 4 hamburgers.

Ingredients:

For the potato hamburger buns (makes 8 buns):

3.5grs of dry yeast

½ cup of lukewarm milk

1 egg

1/3 cup of mashed potatoes

2 ½ cups of self-rising flower

¼ cup of sugar

2 tablespoons of melted butter

Pinch of salt

Egg wash (1 egg beaten with 1 tablespoon of water)

1 ½ tablespoons of black sesame seeds

For the sundried tomato pesto (enough for 4 burgers):

130grs of sundried tomatoes

A handful of fresh basil leaves

1/3 cup of cashews nuts

2 tablespoons of olive oil

Pinch of salt

For the caramelized onions:

3 medium onions, thinly sliced

3 tablespoons of olive oil

Pinch of salt

1 1/2 tablespoons of balsamic vinegar

1 tablespoon of port

For the burger patties (makes 4 burgers):

700grs of minced beef

1 teaspoon of garlic powder

1 teaspoon of smoked paprika

1 teaspoon of onion powder

1 teaspoon of celery salt

Pinch of black pepper

2 tablespoons of smoked BBQ sauce

Extras:

Hellmann’s to spread on the bread

4 tablespoons of butter to cook the burgers

4 cheese slices of your choice, I used a Gouda with chili

Lettuce of your choice, I used for lamb’s lettuce

 

To make the potato hamburger buns:

Boil 3 medium potatoes until they are completely cooked. Then peel them and mash them. Make sure there are no lumps. Measure 1/3 of a cup of mash potato and set it aside to cool.

Place the lukewarm milk and yeast in the bowl of the stand mixer. Let it sit for 5 minutes to activate the yeast. Then add the flour, mashed potato, sugar, salt, egg and melted butter. Knead on low speed for 5 minutes, using the dough hook attachment.  If you knead it by hand, it will take about 10 minutes.

Then remove the dough from the bowl. Clean the bowl and then grease it with a bit of vegetable oil. Form the dough into a ball and place it back into the greased bowl. Cover with plastic film and let it rise for 1 hour in a warm place.

Once the hour has passed, line a large baking sheet with parchment paper. Since I have a small oven, I used two small sheets. Place the dough in your floured working area. Punch it to get rid of some air. Slice it into 8 equal pieces. Form each piece into a ball, pinching the ends together at the bottom. Place the balls in the prepared baking sheet, leaving some space in between each ball. Remember that they will rise for another hour and then rise again while baking.

Cut out a large piece of plastic wrap (large enough to cover the baking sheet) and brush it with some vegetable oil. Cover the buns with it, greased side touching the buns. This will prevent it from sticking to them once they rise.

Let the buns rise for 1 hour in a warm place.

About 10 minutes before your timer goes, preheat your oven to 180C/350F.

Brush each bun with the egg wash and sprinkle with some black sesame seeds.

Bake the buns for about 12 minutes or till golden. Set them aside.

To make the caramelized onions:

Place the olive oil in a large pan over medium heat. Once the oil is hot, lower the heat to med-low and add the red onions, balsamic vinegar, port and salt. Let it cook for about 10 minutes until they caramelized. Stir every few minutes to avoid them from burning. Set it aside.

To make the sundried tomato pesto:

Just place the sundried tomatoes, basil, cashews, olive oil and salt in the food processor or blender. Blend or pulse until it becomes a paste. Taste for salt and set it aside.

To make the burger patties:

Mix the minced beef with the spices and BBQ sauce. Then form 4 equal patties.

Once the bread and toppings are ready, start to cook the burgers.

Melt the butter in a pan over medium heat. Then add the burger patties and cook them for about 4 minutes on each size. On the last minute, add the slices of cheese and cover the pan with a lid so that the cheese can melt.

Spread the bottom of the bun with the sundried tomato pesto, and then add some lettuce. Place the beef patty over the lettuce and top with some caramelized onions. Spread some Hellmann’s on the top part of the bun and enjoy!

Ficelle with Brie, Figs and blackberries

This is more an idea than an actual recipe but it is great when you don´t want to spend too much time in the kitchen. It is perfect for a picnic or to serve at a dinner party. This is one of those things that I could eat at any time of the day. If you have never had ficelle before, it’s type of French bread. It is smaller than a baguette. If you can’t find it, just use one baguette instead.

Ingredients:

2 ficelles, sliced in half lengthwise (Similar to baguette, but smaller)

200gr of brie, sliced into pieces

4 figs, thinly sliced

1 cup of blackberries

¼ cup of pomegranate seeds

150grs of arugula

2 tablespoons of olive oil

About 3 tablespoons of balsamic reduction

Salt

 

If you have never made balsamic reduction, is it very easy to make. Get a small bottle of balsamic vinegar (about 250ml). Since you are going to reduce it, just get the cheap kind. Pour the balsamic in a saucepan over medium heat and let it reduce to about 1/3 of the original volume. Then pour it in a glass container and allow it to cool down. As it cools down, it will harden a bit. This is something I always have in the house since I love drizzling it over salads.

Mix the arugula with a pinch of salt and the olive oil. Spread it over the sliced ficelles. Top with the figs, blackberries, brie and pomegranate seeds. Finally drizzle some of the balsamic reduction and enjoy!

Skillet Breakfast Pizza (with Greek yogurt)

Yesterday was such a gorgeous spring day here. For the first time this year we could bike without our jackets on. We took advantage of the beautiful weather and were out pretty much all day. We went out for lunch, for ice cream and just biked around the city feeling the sun on our skin. Since the weather is quite temperamental here, if it’s sunny and warm you go outside and enjoy it. No question about it because you don’t know when you’ll have another day like that. And of course the whole city was out. People were laying in the park and having BBQs. The cherry trees are blooming. On the weekends I try to be more active on Snapchat, especially if the weather is nice. So if you would like to get a peek of Amsterdam, you can add me: cravingsinams.

I could eat pizza at any time of the day and now that spring is here, why not a breakfast pizza that screams of spring? It’s perfect to make on the weekend. For the sauce, I made it with Greek yogurt, spices and olive oil. The only cheese I added was thinly sliced Parmesan.

This recipe makes 2 small pizzas. I used a 23cm cast iron skillet.

Ingredients:

For the dough:

3.5grs of dry yeast

1/2 cup of warm water

Pinch of sugar

1 tablespoon of olive oil

Pinch of salt

1 1/3 cups of all-purpose flour

For the Greek yogurt sauce:

120grs of Greek yogurt

Pinch of garlic powder

Pinch of cayenne

Pinch of celery salt

2 teaspoons of olive oil

For the toppings:

¼ cup of blanched edamame

6 asparagus, thinly sliced (I sliced the tips in half lengthwise)

4 slices of Parma ham, broken into pieces

20grs of parmesan, thinly sliced with a knife or grated

2 eggs

Extra:

Olive oil

 

Start by making the pizza dough; place the warm water, yeast and sugar in the bowl of the stand mixer. Let it stand for 5 minutes.

After the 5 minutes have passed, add the flour, salt and olive oil. Knead on low speed for 5 minutes using the dough hook attachment. If the dough is too sticky, just sprinkle a bit more flour and let it knead for 1 extra minute.

Then remove the dough from the bowl. Clean the bowl and then grease it with a bit of vegetable oil.  Form the dough into a ball and place it back into the greased bowl. Cover with plastic film and let it rise for 1 hour in a warm place.

Once the hour is up, place your skillet in the oven and preheat it to 230C/446F.

Mix all of the ingredients for the Greek yogurt sauce.

Place your dough in your floured working area. Divide it into 2 equal pieces. Roll out one piece about the same size as your cast iron skillet. Once your oven is hot, remove the skillet (use gloves). Pour about 1 ½ tablespoons of olive oil into the skillet and swirl it around so it covers also the edges.

Place the dough in the skillet, spread half of the yogurt sauce and add half of the asparagus, edamame, ham and Parmesan. Separate the egg white from the egg yolk in two small bowls. Only add the egg white in the middle of the pizza.

Bake for 15 minutes. Then remove the pizza from the oven and place the egg yolk on top of the egg white. Bake it for an extra 3 minutes.

Remove from the oven and repeat for the remaining piece of dough. I suggest you share this one while the other is in the oven.

Flatbread

The other day I made Ottolenghi’s hummus; you can find the recipe on the New York Times Cooking website. Cooking the chickpeas with some baking soda really makes a different. Most of the skin of the chickpeas comes off while cooking and it makes a really smooth hummus. So to go along with the hummus, I made these flatbreads. They are so easy to make and you probably already have all the ingredients at home!

This recipe makes 12 flatbreads.

Ingredients:

3.5grs of dry yeast

1 ½ cups of lukewarm milk

4 cups of all-purpose flour

1 teaspoon of salt

100gr of butter, melted and cooled

Olive oil for cooking the flatbreads

 

You can knead the dough by hand but I was feeling lazy so I used my stand mixer fitted with the dough hook attachment. Place the lukewarm milk in the bowl of the stand mixer and add the yeast. Let it sit there for 5 minutes. Then add the flour, salt and butter. Knead it on low for 5 minutes. Remove the dough from the bowl and form it into a ball. Clean the bowl and then grease it with a bit of vegetable oil. Then place the dough back in the bowl. Cover with plastic wrap and let it rest in a warm place for 30 minutes.

Once the 30 minutes are up, place the dough on your floured working area and divide it into 12 equal pieces. Roll each piece into a ball. Then roll each ball into circle, it doesn’t have to be perfect. I rolled them into about 20cm in diameter. Place some plastic wrap in between each flatbread so they don’t stick.

Once all the flatbreads are done, start cooking them. Pour about 1 tablespoon of olive oil in a large pan over medium heat. Then place one of the flatbreads in the pan and cook it for about 1 minute until it bubbles up and starts to get a bit brown on the bottom. Then flip it and cook the other side for about 1 minute. Repeat for all of them.

Apple, Cardamom & Cinnamon Pull-Apart Bread

My sweet tooth was bugging me again so I gave in. I’ve wanted to make this recipe for a couple of weeks already but didn’t find the time. The combination of apple, cinnamon and cardamom is just irresistible. I made apple chips and placed one chip in between each slice of the dough, so when you pull it out you get a lovely apple surprise. You can also use store-bought chips, but if you want to make them at home, you can find the recipe by clicking here. Just don’t add the cayenne and sumac. This recipe is for a 25cm loaf pan.

Ingredients:

For the dough:

3 ½ cups of All-purpose flour

7gr dry yeast

1 cup of milk

1 tablespoon of cardamom powder

1 teaspoon of salt

4 tablespoons of butter, melted and cooled

1/3 cup of sugar

1 egg

For the Filling:

3/4 cup of sugar

1 ½ tablespoons of cinnamon powder

1 teaspoon of cardamom powder

3 tablespoons of melted butter

2 apples made into apple chips, you can buy them but I made them at home. Recipe here (just skip the cayenne and sumac)

Extras:

Egg wash (1 egg beaten with 1 tablespoon of water)

 

Pour the milk into a small saucepan over medium heat. Add the cardamom powder and whisk it. Once it starts to simmer, turn off the heat. Transfer it to a bowl and let it cool down to lukewarm.

Place the yeast and the lukewarm cardamom milk in the bowl of the stand mixer. Let it sit for 5 minutes.

Place the rest of the ingredients for the dough in the bowl with the yeast.

Knead on low speed for 5 minutes, using the dough hook attachment.  If you knead it by hand, it will take about 10 minutes.

Then remove the dough from the bowl. Clean the bowl and then grease it with a bit of vegetable oil. Form the dough into a ball and place it back into the greased bowl. Cover with plastic film and let it rise for 1 hour in a warm place.

Once the hour has passed, line your loaf pan with parchment paper.

Divide the dough into 2 equal pieces and lightly flour your working area.

Mix the sugar, cinnamon powder and cardamom powder for the filling in a small bowl.

Roll out one piece of dough into a rectangle of about 44×22 centimeters. Brush it with some melted butter. Then sprinkle some of the spiced sugar all over it. Then using a pizza cutter slice the dough in two lengthwise. Then cut each long slice into 6 pieces, so you have a total of 12 pieces. Place 1 apple chip on top of each piece. Stack each piece on top of the other. Arrange it in half of the prepared loaf pan. Repeat for the remaining piece of dough. Keep the leftover spiced sugar.

Let it rise for 30 minutes in a warm place. About 10 minutes before the time is up, preheat your oven to 180C/350F.

Once the 30 minutes are up, brush the top with some egg wash and sprinkle some of the remaining spiced sugar.

Bake for about 25 minutes or until golden. About 20 minutes in, check if it’s getting too dark because of the spiced sugar. If it is, cover the top with aluminum foil for the remaining baking time.

Sun-dried Tomato Pesto Babka

Time for a savory babka recipe. I made a pesto with sun-dried tomatoes and cashew nuts. The result is a bread that reminds of pizza. Besides eating it plain, you can cut two thin slices, place some cheese in between and then waffle it. Yes, it’s good! It gets crispy on the outside and melted cheese on the inside. Heaven!

This recipe is for one large babka (25cm loaf pan)

Ingredients:

For the dough:

3 ½ cups of all-purpose flour

7grs of dry yeast

½ cup of warm water

½ cup of milk

1 teaspoon of salt

4 tablespoons of olive oil

1 egg

1 tablespoon of sugar

For the sun-dried tomato pesto:

180gr of sun-dried tomatoes preserved in oil, drained

½ cup of unsalted cashew nuts

40gr of grated Parmesan

2 tablespoons of dried basil

1 tablespoon of dried oregano

1 teaspoon of lime juice

1 teaspoon of sugar

½ cup of tomato puree

Pinch of salt

Chili flakes to taste

Extra:

Egg wash

 

Place the yeast and the warm water in the bowl of the stand mixer. Let it stand for 5 minutes.

After the 5 minutes are up, add the remaining ingredients for the dough. Knead on low speed for 5 minutes, using the dough hook attachment. If you knead it by hand, do it for about 10 minutes.

Then remove the dough from the bowl. Clean the bowl and grease it with a bit of vegetable oil. Form the dough into a ball and place it back into the greased bowl. Cover with plastic film and let it rise for 1 hour in a warm place.

While the dough is rising, start making the pesto. Place all of the ingredients for the pesto in the food processor. Pulse until you have a paste and everything is mixed through. Place it on a bowl and set it aside until ready to use.

Once the dough has risen, divide it into 2 equal pieces. Roll out one piece into a rectangle of about 34x26cm. Spread half of the pesto all over the dough. Then roll it like a tight crepe. Repeat for the remaining piece of dough.

Once you have two filled logs, grab one and make a clean slice over the middle. But leave the top part attached. Then twist it trying to keep the open side up. Repeat for the other log. Then twist the two logs together, slice off the uneven edges. Then pinch the edges to seal them and tuck them underneath. Place the babka in a loaf pan lined with parchment paper. Cover it with a piece of greased plastic wrap. Let it rise for 1 hour in a warm place.

About 15 minutes before the second rise is up, preheat your oven to 180C/350F.

Brush the babka with the egg wash. Bake it for about 20-25 minutes or until golden.
